Strawberry Shortcake Ice Cream Bars
Ingredients:
2 cups heavy whipping cream
1 14 oz can Sweetened Condensed Milk
½ cup strawberry jam
1 cup crushed shortcake cookies (or about 8 cookies)
¾ cup freeze dried strawberries

In a large mixing bowl, beat the heavy whipping cream using an electric hand mixer until it’s fluffy with soft peaks (about 4-6 minutes).
Fold in the sweetened condensed milk and strawberry jam until fully incorporated. Transfer to a freeze pop mold and let freeze overnight, or for at least 4-6 hours.
Make the strawberry shortcake coating. In a food processor, combine the cookies and freeze dried strawberries. Pulse until it’s crumbly.
Remove the popsicles from the freezer and let them sit at room temp for 5-10 minutes.
Remove them from the mold and evenly coat in the strawberry shortcake coating.
Place on a parchment paper lined baking sheet and place in the freezer for 10 minutes. Serve and enjoy!
