Peach Crumble Bars

Ingredients:

  • 4 large peaches, sliced

  • 1 & ½ tsp pure vanilla extract, divided

  • 4 tbsp honey, divided

  • Juice of ½ lemon

  • 1 and ½ cups unsalted butter, softened

  • 1 and 1/4 cups brown sugar

  • 1 tsp Cinnamon

  • 3 cups rolled oats

  • 1 & ½ cup flour

  • 1 tsp baking powder

  • ½ tsp salt

 

Recipe:

  • Preheat your oven to 350F and line a 9x13 baking dish or sheet pan.

  • In a medium mixing bowl, toss the peaches in 2 tbsp of honey, ½ tsp of vanilla, and the lemon juice. Set aside.

  • In a large mixing bowl, cream together the butter, brown sugar, remaining 2 tbsp of honey, and 1 tsp of vanilla until smooth. Mix in the rolled oats, flour, baking powder, cinnamon, and salt until a dough forms.

  • Press two-thirds of the crumble into the bottom of the prepared baking dish. Bake for 10 minutes, then remove from the oven.

  • Spread the peach mixture evenly on top of the baked bottom layer. Sprinkle with remaining crumble. Bake for another 25-30 minutes.

  • Let the bars set for 30 mins to an hour before slicing into squares. Serve as is or with vanilla ice cream!
