Harvest Bowl (Sweetgreen Copycat)

One of my favorite things to add to my weekly dinner rotation is this Harvest Bowl, which is a copycat of the dish from Sweetgreen. It’s the perfect dinner, filled with dense, rich nutrients. The best part is it’s super easy to make at home! The roasted chicken mixed with warm wild rice, seasonal produce, and tangy goat cheese makes for an insane flavor combination and the best, easy weeknight dinner.

The Harvest Bowl (Sweetgreen Copycat) is on my weekly dinner rotation. With the seasonal produce and warm chicken and rice, this meal is super cozy and perfect for Fall. The warm roasted sweet potatoes, apples, and shredded kale create a dense blend of delicious, Autumn flavors. They are jam packed with nutrients and make for a hearty meal.

Adding nuts and goat cheese to the bowl amplifies the textures of the meal. The almonds create a delicious crunch, while also balancing the sweetness of the potatoes. The goat cheese adds a creaminess and richness that contrasts the kale and rice, while adding a bit of a tang.

The bowl is topped off with a balsamic vinaigrette. The dressing adds an acidic tang with a sweet depth. These attributes make each bite of the bowl have cohesive flavor.

  • Balsamic Vinaigrette (olive oil, balsamic glaze, lemon juice, salt): brings all of the flavors together, while adding moisture and a sweet tang.

Ingredients

For the salad
  • 3 chicken breasts
  • 1-2 tbsp olive oil
  • Pinch of salt
  • 1 large sweet potato
  • 1 cup wild rice
  • 2 cups water
  • 1 large apple
  • ¼ cup almonds
  • 3 cups kale
  • Crumbled goat cheese
For the dressing
  • ¼ cup olive oil
  • 2 tbsp balsamic glaze
  • Juice of ½ a lemon
  • ¼ tsp salt

Instructions

  1. Preheat oven to 425F
  2. Line a baking sheet with parchment paper. Dice the sweet potatoes and drizzle oil and salt onto the chicken breast. Place both the chicken and potatoes on the baking sheet and bake for 25-30 minutes or until the chicken is cooked through and the potatoes are golden brown.
  3. While the chicken and potatoes are baking, add rice and water to a saucepan. Bring to a simmer and cover. Cook for about 8-10 minutes.
  4. Next, dice up the apple, almonds, and kale. Massage the kale in 1 tbsp of oil
  5. To make the dressing, whisk together the olive oil, balsamic glaze, lemon juice, and salt
  6. Once everything is prepared, grab a bowl and assemble all the ingredients. Don’t forget to top with crumbled goat cheese
