Kitchen Sink Granola

Ingredients:

  • 3 tbsp liquid sweetener (I use honey or maple syrup)

  • 3 tbsp oil (I typically use olive oil)

  • 1/4 cup nut butter (I always use peanut butter, but tahini is also delicious)

  • 2 tbsp chia seeds

  • flavors of choice (I always add 1 tsp of vanilla bean paste and 1/2 tsp cinnamon)

  • 2 & 1/4 cups rolled oats

  • 1/4 cup superfood (you can use shredded coconut, cacao nibs, flax seeds, etc)

  • 1/4 cup nuts (walnuts, pecans, pistachios, etc)

  • 1/4 cup dried fruit (I always use dates, but raisins are good too)

 

Recipe:

  • Preheat your oven to 250F.

  • In a large mixing bowl, whisk together the sweetener, oil, nut butter, chia seeds, and flavors until smooth. Fold in the oats, superfood, nuts, and dried fruit until evenly coated. Transfer to a lined quarter baking sheet and spread evenly. Place in the oven to bake for 40-50 minutes, or until golden brown.

  • Let this completely cool and come to room temperature (about 1 hour) before breaking it up.

  • Store in an airtight container for up to 2 weeks.
