Sourdough Peach Fritters
Ingredients:

1/4 cup heavy whipping cream
1/4 cup sourdough starter
1 egg
1 cup all-purpose flour
1 tbsp cane sugar
1 tsp baking powder
½ tsp cinnamon
¼ tsp salt
2 large peaches, diced
Oil for frying (I like tallow or avocado oil!)
vanilla bean glaze
1 cup powdered sugar
2-3 tbsp milk
1 tsp vanilla bean paste
Recipe:
In a large mixing bowl, beat together the whipping cream, sourdough starter, and egg using an electric hand mixer until well combined.
Add in the flour, cane sugar, baking powder, cinnamon, and salt and beat until just combined (don’t overmix!) Fold in the peaches and set aside.
Fill a dutch oven halfway with the frying oil and heat until it reaches 375F.
Drop in 1/4 cup of batter at a time into the oil and fry until completely golden brown—about 3-4 minutes on each side. Transfer to a wire rack to cool.
In a small mixing bowl, whisk together the vanilla bean glaze ingredients until smooth. Pour over the peach fritters, or dunk each one into the glaze. Serve fresh and warm!
