Apple Cider Donut Pancakes

Ingredients:

Batter

  • 1/2 cup buttermilk (or 1/2 cup of whole milk & 1 tbsp distilled vinegar mixed together)

  • 1/2 cup apple cider

  • 1/2 cup apple butter

  • 2 eggs

  • 2 tbsp melted butter or oil

  • 1 tsp vanilla

  • 2 tbsp coconut sugar (can sub with cane sugar or any type of granulated sugar)

  • 1 & 1/4 cup all purpose flour

  • 1 tsp baking powder

  • 1/4 tsp baking soda

  • 1 tsp cinnamon

  • 1/4 tsp salt

    Cinnamon Sugar

  • 3 tbsp coconut sugar (or sub any granulated sugar)

  • 1/2 tsp cinnamon

Recipe:

  • In a large mixing bowl, whisk together the buttermilk, apple cider, apple butter, egg, melted butter or oil, vanilla, and coconut sugar until smooth. Mix in the flour, baking powder, baking soda, cinnamon, and salt until a batter forms.

  • Heat a skillet or pan over medium heat. Add a generous pat of butter (you know the pan is hot enough if the butter immediately starts sizzling) Coat the pan in the butter and pour in the batter 1/3 cup at a time. Cook until the batter starts to bubble (about 2-3 minutes), and then flip to cook an additional 2-3 minutes.

  • Serve the pancakes warm topped with butter, maple syrup, and sprinkle of cinnamon sugar!
